pizza dough experiment

Today, I am modifying the cake/AP 50/50 recipe with 25% cake (64g; expired 2 years ago)/25% KA wheat (64g; expired 2 years ago)/50% Trader Joe’s AP (128g;fresh). And to complicate the recipe further, I had just 10 grams of leftover cake so I added it and subtracted 10g from the AP. Let’s see how it turns out…
